Oh, Kat, it was delicious in spite of the heat..al fresco actually but I will try to remember to post it again when it feels more appropriate.

The onions were marinated in beer and from the taste, I'd say they were caramelized further with some whole fat butter.

Tonia, I'm not good with most gooey fats either: cheeses, cream sauces, etc. I really like 'clean food" but this was very tasty and the trick is to only eat a portion of it and all is good.

Tim, it was incredibly good, thanks. The fig chutney is something I intend to work on. We have a fig tree and this chutney inspired me to go for it! Yay!

I checked today and we have almost enough on the tree to make a decent amount of chutney for one meal. Hoping to harvest those babies soon.

Aw, J F, fig isn't your thing, eh? Well, it was subtle and mostly fruity spicy so perhaps you would have enjoyed it anyway.
