It was a really lazy Labor Day around here. Trev had an online class to finish, Steve was ill and it was rainy and cloudy out. We decided to stay in. Got a few little things done around here (cleaning the bird cage, folding laundry, etc) and pretty much relaxed the whole day. So I decided to make a really easy dinner. Too icky out to do outdoor grilling so I defrosted some hot dogs, made some cole slaw and heated up a can of Goya Jalapeno Baked Beans, heated the buns in warm butter and served. Everyone was happy.
Easy clean up too.
So here is the recipe for the slaw because it was a touch different.
From 50 Slaws by the folks at Food Network Magazine.
3/4 cup mayonnaise
1/4 cup sour cream
3 tbsp apple cider vinegar
1 tsp sugar
1/2 tsp black pepper
2 tbsp creole mustard
2 tsp cajun seasoning
1/2 large bag of kale mixture (from Costco)*
For dressing: Whisk together the mayo, sour cream, vinegar, sugar, pepper, mustard and cajun seasoning.
For slaw: Put veggies in a large bowl. Coat well with the dressing. Refrigerate for at least an hour.
*original recipe calls for 1/2 head cabbage and 2 shredded carrots, 1 cup julienne celery, 1 cup julienne bell peppers and 2 chopped scallions. I use a kale mixture from Costco that has cabbage, kale, brussel sprouts, carrots, and other veggies in it.
Yield: 6-8 servings
