Hurley's Zesty Baked Sweet Potato Fries

Yield:6 servings
6 ea Sweet potatoes cut in French fries
2 tb Corn or peanut oil
3 tb Taco seasoning mix
Cayenne pepper to taste
1 ts Kosher salt
Pre-heat oven to 425 deg-F.
In a plastic bag, combine sweet potatoes, oil, taco seasoning, salt & cayenne pepper.
Close then shake bag until fries are evenly coated.
Spread all fries out in 1 layer on 2 large baking sheets.
Bake for 30 mins. until crispy & brown on 1 side.
Turn fries over then cook for another 30 mins. until crispy on the outside & tender inside.
*NOTE: Thinner cut fries may not take as long to get done.

In a small restaurant on Hwy 19 just getting into Inglis, FL (Levy Co) there is a place where they serve French fried eggplants...they are sooooo good, I can order just a double order of them for a meal.
