The cake and icing was absolutely melt in your mouth good! I had to keep myself from eating the whole thing by myself!
This recipe is adapted from Pinterest and was found for me by Chris E.
- 2 cups sugar
- 1-3/4 cups flour
- 3/4 cup unsweetened cocoa
- 2 t baking soda
- 1 t baking powder
- 1 t salt
- 2 eggs
- 1 cup buttermilk
- 1 cup strong black coffee
- 1/2 cup oil
- 1 t vanilla extract
- Heat oven to 350°F. Spray a 13x9" baking pan with cooking spray; set aside.
- Stir together sugar, flour, cocoa, baking soda, baking powder and salt in large bowl. Add eggs, buttermilk, coffee, oil and vanilla; beat on medium speed of mixer 2 minutes (batter will be thin). Pour batter evenly into prepared pan.
- Bake 35 to 40 minutes or til wooden pick inserted in the center comes out clean.
- Cool cake completely before frosting.
Peanut Butter Icing
- 3 oz cream cheese, softened
- 1/4 cup peanut butter
- 2 cups powdered sugar
- 2 T milk
- 1/2 t vanilla extract
1. In a medium bowl with a handheld mixer, beat cream cheese and peanut butter til smooth.
2. Beat in sugar, milk and vanilla.
3. Spread over cooled cake.
