I had been craving pancakes, but not wanting chocolate chip or plain pancakes, and I did not have any blueberries. What to do? Check the refrigerator ... a lemon!
I mixed up enough batter for six pancakes (no, I did not eat them all at one meal!), and added 2 tablespoons lemon juice and 1 teaspoon grated lemon peel. Maple syrup did not seem right on the pancakes, so I spread apricot preserves on them. Really good!
Next time I make pancakes, I will use orange juice and rind.

A sugar-coated pancake cookie. I like that idea! Shredded apples are a great idea, too. With cinnamon?

The applesauce makes them very moist. I would never have thought to try citrus :)
