Homemade egg noodles ~ No fancy pasta machines for Sassy! But noodles sounded easy enough to make without a machine, and I had everything I needed on hand. Eggs, flour, my Mother's rolling pin, breadboard and pastry wheel.

I worked 4 large eggs into 2 cups of flour, and then kneaded the dough until smooth, which took quite a while and takes more effort to knead than yeast dough.

After separating the dough into two parts and allowing it to rest an hour, I rolled it out as thinly as possible. The dough is quite elastic, so I really had to press down the rolling pin. I used the pastry wheel to cut the noodles.Â

I browned a pound of ground beef and half a pound of sliced mushrooms. Added 3 cups chopped tomatoes, 1 cup sweet corn, and about 2 cups of vegetables and juice which I had leftover from braising pork shanks. Brought all to a boil, and then added the noodles. Simmered until noodles were cooked.
How did I like the noodles? I realllllly wanted to luv these noodles. Made from scratch, just 2 ingredients, fun to make, economical, quick to cook. Yep, I really wanted to luv homemade egg noodles. But I don't. I truly prefer store-bought dry noodles. Life is too short to make and eat something I don't like.

I used an knife to cut the remaining noodle dough thin, put them into a ziplock bag and into freezer. Someday, I will use them for homemade chicken noodle soup.

BTW, no need to buy a pasta dryer...just a collapsible wooden clothes rack will work...that's what Luca used...

I have eaten spaetzle, but not made it myself. Some of the older German women around here make it.
It was really good!
My brother makes some good homemade noodles, but he uses a machine thing to press and cut the dough. I guess that does make a difference. I could try to make some gluten free noodles....
