For not being fried, this was darn good chicken. I would use this recipe again.
I served the chicken with buttermilk mashed red potatoes.
- about 2 1/4 lbs chicken pieces, skin removed
- 1/2 cup buttermilk
- 1 T hot sauce
- 1 T Dijon mustard
- 1 garlic clove, minced
- 1/2 t salt, divided
- 1/2 t pepper, divided
- 1/3 cup white whole wheat flour
- 3 T cornmeal
- 1 1/2 t paprika
- 1 t baking powder

Whisk buttermilk through pepper in a large bowl to blend. Add chicken and turn to coat.

Cover, chill at least 2 hours or up to 8 hours, turning chicken occasionally.

Place racks on 2 large rimmed baking sheets. Line sheets with foil and spray with cooking spray.

Whisk flour, cornmeal, remaining salt and pepper, paprika and baking powder in a large baking dish or pie plate to blend.

Remove chicken from marinade, allowing excess to drip off. Add chicken to flour mixture and turn to coat completely.

Arrange chicken, skin side up, on racks on baking sheets. Spray chicken with cooking spray.

Let stand 30 minutes.

Meanwhile, preheat oven to 425°F.

Place chicken in oven and bake til crisp, golden and cooked through about 45-50 minutes.

I'm thinking about chicken soup for dinner, since I made some broth yesterday.
The Dijon was something different that I've never tried in fried chicken before. Wasn't too bad.
I am learning to like more things too. I used to hate spinach, now I love it! Still won't eat liver though.
