Easy and economical!
Sometimes when I make this one can of broth isn't enough. If you check and need more, feel free to add as much as needed.
This recipe may also be baked.
- 1 lb ground beef
- 1/2 onion, chopped
- 1 small (14.5 oz) can diced tomatoes
- 1 small can beef broth, plus more as needed
- 1 cup white rice
- chili powder, garlic powder, onion powder and salt and pepper to taste
- hot sauce (if desired)
- 1 cup shredded cheese (your favorite)
In a large deep frying pan, brown ground beef and onion over medium heat. Drain.
Stir in tomatoes, broth, rice and spices. Return to boiling; reduce heat to low. Simmer, covered, about 30 minutes or til rice is tender and liquid is absorbed.
Stir in hot sauce, if using.
Remove from heat and top with cheese. Cover and let rest 5 minutes, or til cheese is melted.
