Finally! I found a recipe that calls for things I already have on hand!
I used my Jamaican Jerk seasoning recipe for the dish; the recipe can be found here.
For the pasta, I used Cavatappi, a personal favorite. While this isn't pretty, it sure was good. Something different than the norm.

| 1. | Heat a little olive oil in a large frying pan over medium heat. Cook and stir chicken til no longer pink and juices run clear, 7 to 10 minutes. Stir in the pineapple and its juice, coconut, brown sugar, jerk seasoning, cinnamon, chili powder, red pepper flakes, salt and pepper. Reduce heat to low and simmer 15 minutes. |
| 2. | Toss chicken mixture with pasta. |
