Today's Sunday dinner main course was baked pork chop coated with Kraft Fresh Take Southwestern Three Cheese breadcrumb & cheese coating. There was a little chili powder in that! The package is enough to coat 6 pork chops. I dumped about a third of the cheese and crumbs into a shallow pan to coat my two pork chops, saving the remainder to mix in with a meatloaf I will make later this week. I surrounded the chop with fresh garden vegetables: fried potatoes and onions. wee atomic red carrots cooked with onions, second crop green and yellow beans cooked with onions. Yep, I like onions!
Dessert? How about a peach cobbler with pears? Unfortunately, I don't know where to begin looking for my Mother's peach cobbler recipe... in her two stuffed recipe boxes, the 3-inch high stack of magazine & newspaper clipped recipes, or several hundred cookbooks. After going cross-eyed looking at Google images of cobbler recipes, none of which looked like Mom's, I winged it. The resulting cobber was good, but it needs more liquid on the bottom and the topping batter should have been thicker. But it tastes great. I don't know why the pears turned pinkish. Here is the recipe if you want to try it. I'll be adjusting it if I ever make it again. With luck, I'll find Mom's recipe someday.
Sassy's Peachy Pear Cobbler 15 ounce can sliced peaches in lite syrup Drain syrup from peaches into 1 cup measure. Add enough water to equal 1 cup. Pour into saucepan and add cornstarch. Bring to a boil, and boil 1 minute, stirring constantly. Add peaches, pears, and 1 teaspoon vanilla. Pour into 2-quart baking dish. Place in 350 degree oven. In medium bowl, cut together flour, sugar, shortening, baking powder, and salt until crumbly. Stir in egg, milk and 1 teaspoon vanilla. Remove baking dish from oven, drop batter by heaping spoonfuls onto peaches and pears. Return to oven and bake 35 minutes or until top is light golden.

Try hitting the pears with some lemon juice first.
I actually did just buy some pork chops. I need to find the recipe I used last time... it was really good!
Hubby loves his pork chops breaded in any way possible.
I love to cook, too, only being without a dishwasher right now I take the lazy carryout or deli way to dinner these days. Occasionally, though, I will do one of my big dinner recipes - like cornish hends stuffed with wild rice, coated with a delicious soy sauce/honey/ginger coating and baked inside oiled brown paper bags....the messiest - yet best - meal ever!
