Cajun Hush Puppies

Yield: 1 batch
2 c Self-rising cornmeal
1 ea Onion minced
3/4 c Milk
1/2 ts Cayenne pepper ground
1 ea Egg
Peanut oil as required
Combine all ingredients except oil then mix well.
Heat 1" of oil until hot but not smoking.
Drop cornmeal mixture by rounded teaspoonfuls into oil to form hush puppies.
Cook in batches 2-3 mins. while turning to brown on all sides.
Remove from oil with a slotted spoon.
Drain on a paper towels on a platter.
Serve immediately while still hot.
