Namibian Cabbage & Fish Stew

1 ea head cabbage diced
1/4 c Corn oil
1 ea Onion diced
2 ts garlic minced
4 ea roma tomatoes diced
1 c water
1 ea 6 oz can tomato paste
1 ea 15 oz can mackerel in tomato sauce
Red pepper flakes to taste
Salt to taste
Put cabbage into a large pot then cover with salted water.
Bring cabbage to a boil.
Reduce heat to med-low then simmer for 8-10 mins. until just tender then drain.
Heat coil in a saucepan over med-heat.
Cook as stirring stir onion & garlic for 5-8 mins. until onion is translucent.
Stir tomatoes into onion mixture then.
Pour into pan then stir well.
Replace cover then cook another 5 mins.
Add mackerel & its tomato sauce.
Stir then season with red pepper flakes & salt.
Stir drained cabbage into this mixture.
Cover pan then simmer mixture for 7-10 mins. until mackerel is hot.
