One of my favorite entrees - salsa pork chops. Sometimes I bake them in the oven, today I left them in the skillet to simmer. Delicious! Also on my plate was a small cob of sweet corn, green and yellow beans cooked with onion, and a potato with sour cream. All veggies from my garden. I guessed there was not a Sunday dinner meal served in any restaurant in town that tasted better. And this plate of food cost less than $2. I mixed up fresh salsa to cook on top of the chops. I have no specific recipe, just what I happen to have on hand. I was going to add poblano pepper, but I forgot. Of course, fresh garden tomatoes are the best. To change it a bit, leave out the salsa-type ingredients and use all Italian seasonings instead. Sassy's Salsa Pork Chops 3 pork chops Brown chops on both sides in large nonstick skillet. Stir together remaining ingredients in a bowl. Spoon equal amounts of tomato mixture over each chop. Cover and simmer until chops are cooked through, about 20 to 30 minutes, depending on thickness of chops.
