I like to make (1) good spaghetti sauce with meat, (2) mini 1/2 lb meat loaves using stove top stuffing, and (3) good chili. Not very creative but good basics.....
Meatballs to make meatball subs with. Lasagna, shepards pie, tacos, hamburgers, meatloaf, spaghetti, chili, sloppy joes, vegetable beef soup... I use to be the hamburger queen, it was always the cheapest thing going when the older boys were growing up.
Do what I do. Take an inventory of leftovers and stuff you have on hand. Create something new. Homemade stroganoff? Make your homemade taco meat and then mix it with a can of navy beans. SOOO good. Or the same meat and mix it with the Knorr's teriyaki noodles. Avocado burgers. Mexican meatloaf. Stuffed pepper soup. Cheeseburger soup. Jamaican beef pockets. Endless possibilities.
Just go to www.bettycrocker.com and type in 'Impossible Cheeseburger Pie' and the original recipe will come up along with some variations. It's something that my whole family likes and it's fast and easy.
I just fry ground beef with onions and peppers, dump in a can of chili beans (or use plain beans with your own seasoning mix). Then I spoon it over a baked potato.
Our favourite recipe is a stir fry with onions, the ground beef, rice (pre-boiled) and a bit tomato sauce. At last, add banana and some chili. Awesome!

I am thinking about meatloaf. Got a good recipe? I don't have any stuffing to use...
How do you make the pockets? Did you make the pocket itself homemade? I might be able to do that one.
