1 large zucchini
1 cup all purpose flour
2 eggs beaten well
1 cup bread crumbs (I use Panko)
1 cup grated Parmesan cheese (Asiago works well too)
salt & pepper to taste
Oil for frying
Slice thick slices of zucchini, salt & pepper to taste. I use 3 containers for the next steps and a cookie sheet to place them on before cooking. First container for flour, second container for eggs, and third one for bread crumbs and cheese. Dredge zucchini slices through flour, then wet them with eggs, dredge through bread crumbs and cheese mixture, making sure they are thoroughly coated. Place on cookie sheet. After all zucchini is breaded, heat skillet over medium heat. Fry to a golden brown and turn to cook the other side. Remove to a platter an repeat until all zucchini is cooked. To serve, you can leave it as is or sprinkle with more cheese.
You could also cover each slice with a marinara sauce top with mozzarella cheese and place in oven until cheese is bubbly and slightly brown.
When using seasoned bread crumbs you probably don't need to add anything else. But a few spices would not hurt, like: oregano, basil, Italian seasoning, marjoram and garlic. Experiment and see what you like.
This could be served with a meat or not. Pasta would go well or mashed potatoes. I served it one night with a simple chicken breast seasoned and baked to perfection.
