In my never ending quest to find the perfect fried chicken recipe, I came across this easy recipe in Glamour magazine. It was good fried chicken, but my quest continues. This was not perfect fried chicken.
1 1/2 cups flour
1/2 cup cornmeal
seasoned salt to taste
pepper to taste
garlic powder to taste
2 eggs
1/2 cup milk
1 whole chicken, cut up and skinned
3 cups oil (I used canola)
Combine flour, cornmeal and salt and pepper in a large ziploc bag or covered container; set aside.
In a large flat bowl, whisk eggs and milk together. Coat chicken with egg mixture; shake in flour mixture til chicken is well coated. Repeat with remaining chicken pieces.
Meanwhile, heat oil over medium high heat in a large frying pan, preferably cast iron.
Fry chicken about 15 minutes on first side; turn chicken. Cover pan and cook 10 minutes more. Remove cover and cook chicken 5 more minutes, or til chicken is cooked through.
Drain on paper towels or paper bags.
Serve hot or at room temperature.

The trick is in cooking a frozen ear. Do Not thaw the ear out. Put it in a steamer for 30 minutes. Delish. Oh, take the Saran Wrap off before steaming it. 8:)
