Sunday Dinner at Sassy's House ~ Corn on the Cob

One of the pleasures of summer ... fresh corn on the cob from the garden.  There was always a big garden out back when I was a kid.  We never bought vegetables from a store.  Bushels of garden goodness were canned, frozen or stored in the basement.  I remember when the sweet corn was ripe, that is all we ate every supper for an entire week.  A big kettle of boiled sweet corn with some butter and salt.  It was good for the first day or two, but I was so glad when that week was over every year.  ha!

Today I boiled sweet corn in the same old kettle Mom used.  Brushed with butter and sprinkled with garlic pepper seasoning (McCormick Montreal Steak seasoning), the corn tasted pretty darn good.  I fried some zucchini pancakes, sliced a small Amish paste tomato, and cut a mini bell pepper into rings.  All from my garden.  No meat on the plate, but I didn't miss it at all.

For dessert ... one of my favorite summer treats.  I put a scoop of vanilla ice cream in a glass, and then fill the glass with fruit juice.  My favorite juice for this is Dole's Orange Peach Mango.  Let stand for a few minutes for the ice cream to soften.  Stir with a spoon for a delicious fruity smoothie.  A chocolate dipped cookie was the perfect accompaniment.
