Bubba's Pecan Tarts

Yield: 1 batch
1 ea 3 oz pkg cream cheese softened
1/2 c Butter softened
1 c All-purpose flour
1/4 ts Salt
Filling:
1 ea Egg
3/4 c Dark brown sugar packed
1 tb Butter melted
1 ts Vanilla extract
2/3 c Pecans shelled & chopped
Maraschino cherry 1/2's
Beat cream cheese and butter.
Blend in flour & salt.
Chill for 1 hr. then shape into 1" balls.
Press into the bottom and up the sides of greased mini-muffin cups.
Pre-heat oven to 325 deg-F.
Filling:
Beat egg in a small mixing bowl.
Add brown sugar, butter & vanilla then mix well.
Stir in pecans.
Bake for 25-30 mins.
Cool in pan on wire rack.
Decorate with maraschino cherries.
