I found this recipe on the back of the baking mix.
It made great bread!
2 eggs
1/2 cup sugar
2 cups baking mix
1 - 1/2 cups chopped fresh rhubarb
1/2 cup chopped nuts
Preheat oven to 325 degrees. Spray a 9 x 5" loaf pan with cooking spray; set aside.
In a large mixing bowl, beat eggs til fluffy. Add sugar and beat again. Stir in baking mix alternated with rhubarb, beginning and ending with baking mix. Fold in nuts.
Bake 60-65 minutes or til a pick inserted in the center comes out clean.
Cool in pan on a wire rack 10 minutes. Remove from pan and cool on rack.

I just made some Norwegian rhubarb pudding yesterday. I didn't have the proper amount of rhubarb so my estimates of how much cornstarch to put in were off and it's a bit runny; I'm still slurping it up, though. It would make perfect sauce for ice cream, if I had any!
Never met a rhubarb recipe I didn't like!
I don't think I've ever tried a quick bread in the breadmaker.
