Flat Muffins! Come and get your free sample of Flat Muffins! Get 'em while they are hot! The weather has been so hot and humid, that I did not feel like cooking meat and vegetables for dinner today. And I'd been planning on making blueberry muffins. Yeah, like it isn't too hot to bake. ha! So I got this ingenius idea to make blueberry pancakes and consider them my muffin baking. Yep, Flat Muffins! I'd hand out free samples to you all, if I could. Blueberry Pecan Flat Muffins 2 cups Bisquick (or other baking mix) Stir together baking mix, milk and eggs until blended. Stir in blueberries and nuts. Pour batter by 1/4 cups onto hot greased griddle or skillet. Cook about 2 to 3 minutes per side until lightly browned. Serve with syrup and butter. Makes about 12 flat muffins (pancakes).

we love to have breakfast for dinner once in a while...
tonight, as most nights, here with summer finally making an appearance after it seemed like we'd never get them like the old days...we are cooking chicken breasts out on the grill...all covered in Sweet Baby Ray's BBQ sauce and some lefyover spagetti warmed in a kettle made for camping out...
almost done...
getting hungry thinking about it...
