Sunday Dinner at Sassy's House ~ Summer Squash

Fast, fresh, cheap, plain, good.  Those are the best adjectives I can think of to describe Sassy's Sunday dinner.  The first two summer squash from Sassy's garden were the stars of the meal.

Magda - a small Mediterranean beauty with a nuttier flavor than zucchini

Enterprise - a yellow straightneck with too many large seeds inside

Sassy sliced the squash thin, sauteed them with onion, green bell pepper, sliced smoked sausage and a moderate amount of garlic pepper seasoning.  When cooked, I stirred in two eggs until set.  Then I dumped the mess on a plate and covered it with shredded Swiss cheese.  Not particularly pretty, but it tasted good and cost less than a dollar for the entire plate!

I don't know about anyone else ... but I would eat 'Sassy's' squash creation right off the bat ... messy looking or not :)

That sounds so good! Last night I made jambalaya in the crock pot with sausage and shrimp. Used the last of the canned tomatoes from last year and also the last of the green peppers I froze last summer.

Sure Glad to see that you are getting some Great Vegetables from your Garden, espically, beteen th lack of Rain and keeping the wild-life at bay.
I fixed Brown Rice and chicken strips with swet-n-sour sause. It was So Good! :)

did you get the seeds for the Mediterranean one at parks? looks like one id like to put on the list for next year, i just love summer squash your dinner looks great the squash i had was done similar i love putting the sausage in it and onions and some gypsy peppers never though of putting on cheese on there or egg

I bought the summer squash mixture which has 20 seeds, supposed to be 5 seeds of yellow zucchini, 5 of green zucchini, 5 of yellow straightneck and 5 Magda. But I'm not so sure about that since last year I did not have any Magda squash, but those seeds might not have sprouted.

Yummy, that sounds so good, BUT since I didn't have anything like that I ordered Pizza... K, not as healthy, but I didn't have to cook. LOLOL I have got to figure out a way to get veggies and herbs to grow here, all I need is just a little more shade and a little less heat and a little more rain......I refuse to give up, I'll try again in October, maybe this time it'll work.

I am not much of a summer squash eater.

We had Teriyaki chicken drumsticks with rice pilaf. Good and light.

Sounds yummy! You're so creative! We had keibasa, potatoes, onion, and zucchini with McCormick's garlic and herb seasoning wrapped up in foil with a little butter and a little oil, thrown on the grill.

You posted a photo of a bean blossom some time ago. Don't you have beans yet? Mine were blooming, then last week it was 100+ degrees for days and almost all the blossoms and buds fell off.

Yes my hubby has been picking them, but that's all that is ready, I don't care for green beans so I wasn't aware they were ready.

I don't think that I've ever met a type of squash that I didn't like.

We've been enjoying the fresh veggies from our CSA share and the farmers' market. Lots of good eats. :-)

Now why do people go hungry when there are good dishes like this which are also very inexpensive? I love squash and all vegetables except beans but I will eat them.

Unfortunately, most kids are visual eaters, if it doesn't look good it isn't worth trying. Put a little of that purple ketchup on it and maybe they'd try it, LOL.
