The original recipe for this came from the latest issue of Food Network Magazine. The original recipe had a salad of some kind on top of the salmon. I omitted that and served it with simply cooked bulghur wheat and some peas with mint.
Soy Glazed Salmon
1 tbsp honey
2.5 tbsp reduced sodium soy sauce
1/2 tsp cornstarch
4-6 oz filets skinless center-cut salmon
1 tsp roasted sesame oil
Kosher salt
Chopped cilantro, for garnish
Chopped avocado, for garnish
Preheat oven to 400 degrees F. Mix honey, 2 tsp soy sauce, and the cornstarch in a microwave-able bowl. Microwave until just simmering, 30-40 seconds.
Rub the fish all over with 1/2 tsp sesame oil and season with salt. Place fish in a baking dish and bake for 5 minutes. Remove from oven and brush with honey mixture. Return fish to over and cook for another 7-9 minutes, depending on thickness of fish.
Serve garnished with chopped avocado and a sprinkle of chopped cilantro.
Served with brown rice and peas with mint.
Yield: 4 servings
