Bubba's Pork Breakfast Scramble

Yield: 6 Servings
6 ea Smoked pork chops boned & cubed 1/2"
6 ea Eggs beaten
1 c Half & Half
1 c Corn whole kernel cooked or canned & drained
3 tb Onion minced
Salt & pepper to taste
Brown pork cubes & onion together.
Drain off excess grease, add egg, corn, Half & Half, & seasonings.
Stir constantly over a low heat until done.
Serve with biscuits or cornbread & lots of buttered grits.
Red-eye gravy goes well over this as well.
