LeFevre's Catfish Appetizer Nuggets

Catfish Nuggets:
2 lb Catfish fillets
1 c Round cheese crackers
1/2 c Grated Parmesan cheese
1/4 c Sesame seeds
1/2 ts Salt
1/4 ts Black pepper
1/2 c Butter or margarine,melted
Sour Cream-Bleu Cheese Dip:
1 pk Dairy sour cream(8oz)
2 tb Crumbled blue cheese
1/4 c Minced onion
1/4 ts Salt
Chopped fresh parsley
Catfish Nuggets:
Cube cat fish fillets to 1" pieces then set aside.
Pre-heat oven to 400 deg-F.
Combine cracker crumbs, Parmesan cheese, sesame seeds, salt & pepper then set aside.
Dip fish cubes in melted butter then roll in crumbs mixture.
Place fish cubes 1/2 inch apart on fole-lined baking sheets.
Bake uncovered in oven for 20 mins. until cubes are golden brown.
Serve immediately with dip.
Sour Cream-Bleu Cheese Dip:
Combine sour cream, blue cheese, onion & salt in a small mixing bowl.
Cover then refrigerate for 2-24 hrs.
Garnish with chopped parsley if desired then serve.
