This was today's lunch. I got the recipe from a blog called Closet Cooking. I've made a similar sandwich but without the fried egg. The egg puts it right over the top. So good.
BLTA with Fried Egg and Chipotle Mayonnaise
2 slices good white bread, lightly toasted*
1 pc romaine lettuce, cut in 2
¼ cup roasted tomatoes, minced
Pepper,. To taste
2 strips bacon, crispy
1 fried egg
½ avocado, mashed
1 tbsp chipotle mayonnaise**
Toast the bread. Cook the bacon until crispy. Let it drain well on paper towels. Cut in half. Spread the bottom bread slice with the mayonnaise. Top with the minced tomatoes. Top with lettuce and then the bacon. Spread the avocado on the top slice. Top the bacon with the fried egg. Sprinkle the avocado and the top of the bacon with a bit of pepper. Put the 2nd slice on top. Squish down and let the yolk dribble down the sides.

*original recipe calls for toasted but I forgot.
**original calls for chipotle mayo. If you can’t find it (I find it under the name Santa Fe Trading), then just take some mayonnaise and put it in a blender with a little chipotle en adobo or a bit of dried chipotle powder.
The original recipe calls for sliced tomato. I had roasted cherry tomatoes so I mashed them instead.
Yield: 1 sandwich
