Azeri Lamb Soup

Yield: 4 Servings
1 lb Boneless lean lamb cubed 1"
Salt & pepper to taste
3 tb Butter
1 ea Onion minced
4 c Beef broth
1 ea Potato peeled & cubed 1/2"
1 ea Quince peeled cored & cubed 1/4"
1/2 c Dried pitted prunes OR
1 c Fresh sour prunes
1/4 lb Chestnuts shelled & peeled
1/4 ts Cinnamon ground
2/3 c Chick-peas cooked drained & rinsed
1/4 ts Ginger powdered
2 tb Clarified butter
Season lamb with salt & pepper.
Melt butter over med-heat.
Add lamb & onioe then saute until browned while stirring often.
Add broth then season to taste with salt.
Cover then simmer for 30-35 mins.
Add potato, quince, prunes & chestnuts.
Cover then simmer 20-25 mins.
Add chick-peas, cinnamon & ginger then cover & simmer, for 15-20 mins.
Stir in clarified butter then allow to melt before serving soup.
