Easy Rhubarb Sauce Recipe ~ only 3 ingredients ~ with photo

Easy to make and delicious, Rhubarb Sauce eaten plain, as an ice cream topping, or topped with whipped cream is a early summer treat!

There are many versions of Rhubarb Sauce, I've listed some possible additions after the recipe.  Here is Sassy's version:

Rhubarb Sauce

8 cups chopped rhubarb (I cut the stalks into 1-inch pieces)
1 cup sugar
1/4 cup water

Combine all ingredients in saucepan.  Heat to simmer for 10 to 15 minutes or until rhubarb is cooked through and 'saucy'.  Most delicious served warm over vanilla ice cream.  It can be put in plastic containers and frozen.  Makes about 4 cups sauce.

Possible additions:
Red food coloring to make it pretty.
Cornstarch to thicken.
Mashed strawberries.
Applesauce.
Cinnamon.
Vanilla.

thats sounds good, do you grow your rhubarb in the sun or part shade im going to put in a couple new plants and I was curious if i could put them more in the shade

I used to have a dozen plants. The only two decent ones that are left are under a wild plum tree, so I guess they do like some shade.

The rhubarb crop this year was not good. It was too hot (mid 80's in March) and dry.

This is the first post I've done in over 6 months. I lost the entire d*mned thing when I tried to save as a draft... the document had "expired"???? WTH?

I've never tasted rhubarb that I liked, LOL. Always so sour. Your ice cream photo makes it look so good. We used to have it as kids for desert but blahyak, I never acquired a tast for it.

A lot of sugar has to be added to rhubarb to make it edible, which makes it a perfect ice cream topping. Depending on the weather, I find that it does sometimes have an 'earthy' flavor.

That's the right idea! Throw the ice cream into the pan of hot rhubarb!
It was a lousy crop this year. Too hot and dry. The plants were terrible.

What a fantastic recipe Sassy! Have always loved rhubarb. My mum made a great rhubarb pie ... this recipe brings back many memoires.

Yes, Gather still glitches! Yesterday was one day out of many that I just signed off because it was a headache to try & maneuver around!

Oh, oh, wait until you see the rhubarb muffins I baked. I've read that rhubarb can be purchased frozen at the grocer, but I've never seen it.
