Turkey-Peach Salad & Peach Dressing

Yield: 6 servings
1 1/2 tb Olive oil
1/3 c Walnuts chopped
8 c Romaine lettuce, torn
1 ea Red Bell pepper*
1 1/2 c Turkey diced
1/2 c Swiss cheese shredded
1 ea Peach peeled & diced
Salt & pepper to taste
Dressing:
3 tb Raspberry vinegar
1 tb Peach preserves
1 1/2 ts Dijon mustard
1/4 ts Tarragon
1/3 c Olive oil
*NOTE: Roasted, peeled & finely diced.
Heat oil in a small skillet.
Add walnuts then cook for 5-8 mins. over med- heat until toasted.
Set aside to cool.
Mix lettuce, red pepper, turkey, cheese & peach in a large salad bowl.
Toss with dressing, salt & pepper to taste.
Dressing:
Whisk together vinegar, peach preserves, mustard & tarragon.
Add oil then mix well.
