This is the only way I make taco salad now. You can't tell it's reduced fat/calories.
1 lb. lean ground beef or turkey
1 can pinto beans, rinsed and well drained (or use your favorite variety)
8 oz. pkg low fat shredded cheese (I used Mexican blend)
2-4 cups crushed reduced fat tortilla chips
12 oz. bag shredded Romaine lettuce
Brown ground beef and drain as needed. Add taco seasoning and a little water and simmer til beef thickens. Remove from pan and cool beef completely.
While beef cools, mix chips with lettuce and cheese in a large bowl. Mix in beans.
Mix in beef.
Variations: Top with light sour cream, red onion, black olives or tomatoes.
