Absolutely amazing fried pork sandwiches!
- 1 pork tenderloin, sliced and pounded very thin
- salt and pepper
- oil, such as vegetable or canola
- 1/2 cup flour, for dredging
- 1 egg, beaten with 1 T milk
- 1/2 cup plain breadcrumbs
- 1/2 t sweet paprika
- freshly grated nutmeg to taste
- 1/2 t ground mustard
- 1/2 t ground thyme, rubbed
- mayo
- mustard
- onion slices
- lettuce
- soft sandwich rolls (I used hoagie buns)
- Season pork with salt and pepper on both sides.
- Heat oil in a large frying pan or Dutch oven over medium high heat.
- Coat meat in flour, egg and breadcrumbs seasoned with paprika, nutmeg, ground mustard and thyme.
- Fry meat in batches. Keep warm in 275° oven on a wire rack set over a baking sheet.
- Serve pork on rolls topped with pickles, ketchup, mustard, onions and lettuce.
- I served the sandwiches with mac n cheese. Easy!
