Absolutely excellent dinner! The best pork I've made in a long time! I can't remember where I got the recipe from.
Served with coconut black beans and rice.
1 pork roast, trimmed and cut into chunks
1 cup sour orange juice (mix orange juice with juice from 1 fresh lime)
1 t Adobo seasoning
1 t parsley flakes, rubbed
1 t thyme, rubbed
1/2 t rosemary, rubbed
1 onion, chopped
1 habanero, halved (mince for hotter flavor)
3 garlic cloves, smashed
hot cooked white rice
- Season pork with Adobo seasoning, rosemary, thyme, parsley, garlic powder, pepper and let marinate at least 4 hours and up to 2 days.
- In a saucepan, cover meat with enough water and orange juice to cover; boil over medium-high heat til liquid evaporates, stirring occasionally.
- Stir in chopped onion and habanero and fry til onion is soft, about 10 minutes. Add garlic and fry another minute or so.
- Serve over rice.
