Mom made this a few weeks ago and I am just now getting around to writing the recipe. Mom says she can't remember where she got the original.
The gravy was doubled, as we all like a lot of gravy. We served the steaks with mashed sweet potatoes.
Gravy
1 cup beef broth
2 t tomato paste
3/4 t flour
1/2 t Dijon mustard
Steak
1 lb ground chuck
2 T fresh chopped parsley
1 T minced onion
1 t Worcestershire sauce
salt and pepper to taste
2 t oil
In a large bowl, combine gravy ingredients. Set aside.
Combine steak ingredients, minus oil. Shape into 4 oval patties.
Brown steaks in 2 t oil in a large frying pan til cooked through. Add to a plate and keep warm while gravy is made.
Add gravy mixture to hot pan and simmer til thickened. Spoon over patties and serve immediately.

Jordan, her friend and I had Chinese food for a late lunch. Dinner is not on my mind yet. :) The Chinese food was wonderful and since they went out to get it, it was even better. My husband came home early so he got my fried rice. :) He said on the phone not to get him a meal... so I knew he'd eat my fried rice.
I haven't had Chinese in forever! I need me some General Tso's!
