I received this recipe from Gather's own David W. I knew I needed to whip this salad up! Yum!
4 cups imitation lobster, chopped
½ cup mayo
2 T chopped celery
1 T fresh lemon juice
pinch dried tarragon
In a large bowl, mix lobster, mayo, celery, juice and tarragon. Refrigerate at least an hour so flavors meld.
Line rolls with lettuce and top with lobster salad. Enjoy!
