This dish turned out absolutely awesome! Even my boyfriend, who doesn't like spinach, ate it all up!
- olive oil
- butter
- 1/2 onion, chopped
- 1 1" piece fresh ginger, peeled and minced
- pinch hot pepper flakes
- 3 cloves garlic, chopped
- sea salt to taste
- 1 T ground cumin
- 1 T coriander
- 2 t turmeric
- 1/4 t ground cardamom
- 1 large tomato, chopped
- 1 1/2 cups chicken stock
- 1/2 6 oz pkg baby spinach
- 1 1/2 lbs boneless skinless chicken breast, cut into chunks
Heat a large frying pan over medium-high heat with a little oil and butter. When the butter foams, add the onion, ginger, flakes and garlic; season with salt and the spices. Sauté 5-6 minutes; stir in tomatoes and cook for 2-3 minutes more.
Add stock and spinach and stir. Reduce heat to medium and add chicken. Cook in the sauce for 6-7 minutes, or til chicken is cooked through.
Served with white rice.
