Szilvas Gomboc - Hungarian Plum Dumplings

Yield: 1 batch
5 ea Potatoes peeled boiled mashed & cooled
2 ea Eggs
1 ts Salt
2 1/2 c All-purpose flour
18 ea Prune plums washed & pitted
1/2 ea Butter
1 1/2 c Bread crumbs very fine
1/4 c Sugar
1/4 c Cinnamon ground
Mix sugar & cinnamnon together
Combine potatoes, eggs and salt.
Add flour when well combined.
Mix until a soft dough forms.
Cover with plastic wrap then allow to rest 30 mins.
Bring a large pot of salted water to a boil.
Roll dough to 1/3" on a lightly floured surface.
Cut to 2" squares.
Place a plum in center of each square.
Fold each square in 1/2 then press out all air & seal edges.
Moisten edges before crimping if necessary to seal.
Carefully drop each dumplings into boiling water.
Repeat until all plums are in water.
Cook for 30 mins.
Melt butter in large skillet, add bread crumbs and brown.
Use a slotted spoon to remove dumplings to a colander so thet they can drain.
Place dumplings in skillet after coating them with buttered crumbs.
Transfer to a serving platter then sprinkle with cinnamon sugar.
