This was excellent! I love using pancetta!
8 oz pasta (I used fettucini)
1 pkg pancetta, chopped
1 small onion, minced
3 cloves garlic, minced
1/2 cup vodka
1 small (14 oz) can diced tomatoes
1/4 cup half-and-half
2 t Worcestershire sauce
1/4-1/2 t hot pepper flakes
pinch dried basil, rubbed, for garnish
freshly ground black pepper, to taste
freshly grated Parmesan
Cook pasta according to package directions.
Meanwhile, heat a little olive oil in a large frying pan over medium heat. Stir in pancetta and onion and saute for about 5 minutes or til onion softens. Stir in garlic and cook another minute or so.
Add vodka and simmer til reduced by about half.
Stir in remaining ingredients and simmer 5 minutes. Toss with cooked and drained pasta.
Serve pasta with freshly grated Parmesan.
