This recipe is adapted from recipe.com. It was absolutely fantastic. The only problem was that this recipe doesn't make enough! I will have to double it next time.
olive or vegetable oil
1 1/2 lbs beef stew meat
3 garlic cloves, minced
salt and pepper
1 T ancho chili powder
1 t ground cumin
3 cups beef broth
1/2 green bell pepper, cut into thin strips
shredded Cheddar cheese, to serve
crushed tortilla chips, to serve
Heat a little oil in a Dutch oven over medium high heat. Add onion and cook til softened, about 5 minutes. Stir in meat and brown.
Stir in garlic, salt and pepper, Ancho chili powder, cumin, broth and green pepper. Cover; reduce heat to medium low and simmer til meat is tender, about 45 minutes.
Serve chili with shredded cheddar cheese and crushed tortilla chips.
