Another hit with tonight's meal... seems that trying to cook simpler I'm scoring higher in the taste-o-meter, at least, as far as my son is concerned.
A beef tenderloin, seasoned and browned in a bit of olive oil and then simply cooked in the clay pot, with just pieces of (already juiced) orange slices and a touch of Sherry. Cook in 375 F oven for about 1 hour; it turned out into a very tender piece of meat.
I also cooked a mixed brown rice with wild rice variety we like, that comes already with seasonings in a container.. and repeated a recipe from sometime last year for Braised Baby Bok Choy with Orange-Honey Glaze.
I will use the left over meat for something else tomorrow...
A very comforting meal, according to my son!

We have a local source of very good beef...grass raised, not too far from where I live...
