This dish was absolutely incredible! I will make it again.
It's from Redbook magazine.
- canola or olive oil
- 1 T Madras curry powder
- 2 t ground cumin
- 1 t ground coriander
- 1 t ground cinnamon
- 1 lb lean ground beef
- 1 small can diced tomato
- 1 1/3 cups white rice, well rinsed
- 1 cup chopped carrot
- 1 cup frozen peas
- 3 cups hot chicken broth
- fresh cilantro, to taste
- fresh lemon juice, to taste
- Heat a little oil in a large, deep skillet over medium-high heat. Add curry powder, cumin, coriander, and cinnamon, stirring quickly to combine. Crumble in beef and cook, stirring with a wooden spoon to break up clumps, 3 to 4 minutes, til beef is browned. Stir in rice, carrots, and peas.
- Add broth and bring to a boil. Cover skillet and reduce heat to low. Cook 15-20 minutes. Remove from heat, keep covered, and let stand 5 minutes, or til all liquid is absorbed.
- Stir in cilantro and lemon juice just before serving.

I've been disappointed in it too. But have no choice around here really.
