I adapted this from Bobby Flay's Burgers Shakes & Fries book. The original called for beef and no onion. I added onion so that the turkey meat would be moister. Worked very well.
So good. These were excellent. I will make them again.
Trattoria Turkey Burger
1.5 lb ground turkey meat
Kosher salt and black pepper
½ onion, chopped*
1 tbsp extra virgin olive oil
4 slices fresh mozzarella cheese
8 basil leaves
4 slices of beefsteak tomato
4 tbsp balsamic vinegar
4 tsp extra virgin olive oil
4 whole wheat rolls**
Over MED heat, cook the onion until soft, about 6-8 minutes. Cool and then finely chop them and add them to a large bowl. Add the turkey and fold the onions in. Form 4 equal patties and place a thumb print in the middle of each one.
Preheat a grill pan OR large skillet over MED-HIGH heat. Add the oil and then the patties and cook for 7 minutes and then flip them over and cook for another 8 minutes. If still not fully cooked, then place in a 350 degree oven for 5 minutes or so. Top with cheese. Cook for another minute to melt the cheese.
Place on the bottom of a toasted bun. Top with 2 basil leaves, a slice of tomato, and a drizzle of balsamic vinegar and a drizzle of oil. Top and eat!
Risa’s notes:
*original recipe did not include onions and was made from beef. When I decided to make the burgers with ground turkey, I had to add some flavor and moisture so I cooked down some onion and put it inside the burger. Worked like a charm.
**original recipe called for a regular hamburger bun.

Use beef then. I just used turkey because we had beef 2 weeks in a row and I wanted to lighten up our meals a little bit.
