An Italian cookie made with finely chopped almonds with a smooth chocolate center.

If the weather is too cold, maybe itâ€™s too warm, your mood is blue, or your so happy you could visit your local Dunkin Donuts and buy every one a latte, whatever the situation, itâ€™s the right time for this little â€œkissâ€.
Makes 14 â€“ 16 cookies
- 1 cup almonds, chopped fine
- 1 cup granulated sugar
- 1 cup unsalted butter, softened at room temp.
- 1 cup flour
- 2 oz bittersweet chocolate
- 1 oz butter
Preheat the oven to 350 F.
Mix the almonds, sugar, butter, and flour to a smooth dough.
Roll into 1 inch balls and place on a greased baking sheet.
Bake for 15 minutes. Allow to cool.
Melt the chocolate. Stir in the butter to a smooth melted mixture.
Dip the bottom of one cookie in the chocolate then press the bottom of another cookie into the chocolate to sandwich the cookies.
Place on waxed paper to cool.
