Ribnaya Solyanka - Russian Fish Soup W/ Pickles

Yield: 4 Servings
1 lb White fish or salmon or cod
2 ea Onions chopped
2 tb Tomaoto puree
1 tb Capers
1 ea Bay leaf
1/2 ea Lemon
1/2 c Black olives pitted
6 tb Butter
4 ea Gherkins dill-pickled
1 tb Dill fresh & chopped
Salt & pepper as desired
6 c Water
Skin & fillet fish.
Cut fish into 1" pieces.
Boil bones, skin, & head in 6 cups of water with salt, pepper & bay leaf.
Strain this broth to remove scales, bones etc.
Chop pickles into 1/4" cubes & chop olives as well if you wish.
Melt butter in a large sauce pan then fry onions until translucent & turning brown.
Add fish pieces, chopped pickles, tomato puree & capers.
Cook for 15-mins. then add olives & lemon slices. cook for 1 min. more.
Serve with dill as the garnish.
