This was today's lunch, invented to use up some leftover ham. Delish!
oil
1/2 onion, diced
1 cup diced good quality ham
about 2 cups chicken broth
1 cup dried black eyed peas
2 t Cajun seasoning
1 bay leaf
salt and pepper to taste
Worcestershire sauce to taste
hot sauce to taste
white rice, cooked according to package
In a large saucepan or Dutch oven over medium heat, saute the onions til softened in the oil, about 10 minutes. Stir in ham. Increase heat to high and add broth, beans and seasonings. Bring to a simmer; cover and reduce heat to medium low. Cook soup til peas are tender, about 1 1/2-2 hours.
Serve with additional hot sauce and rice.
