This recipe is adapted from Jif peanut butter. It is an awesome French toast!
1 cup firmly packed brown sugar
1/2 cup butter
1/2 cup peanut butter (mom used creamy)
2 T light corn syrup
12 1" thick slices French bread
6 eggs, beaten
1 1/2 cups milk
1/2 t salt
3/4 t vanilla extract
1/4 t almond extract
Spray a 13x9" baking pan with cooking spray; set aside.
Stir brown sugar, butter, peanut butter and corn syrup in a small saucepan over medium heat, stirring constantly, til smooth and thickened. Pour peanut butter mixture into baking dish. Place bread slices over mixture, trimming to fit.
Whisk together eggs, milk, salt, vanilla and almond extracts in a medium bowl. Pour egg mixture over bread. Cover and chill 8 hours or overnight.
Preheat oven to 350 degrees.
Remove cover from bread.
Bake 45 minutes or til lightly browned. Invert onto large serving platter. Cut into servings.
