Another recipe adapted from the new Costco book - A Decade of Cooking The Costco Way.
Fresh Cod Piccata
8-4 oz fillets cod
Salt and pepper
5 tbsp all purpose flour
4 tbsp vegetable oil
2 tsp minced garlic
2 tbsp small capers, drained and rinsed
1/2 cup white wine (I used fish bouillon)
Juice of 1 lemon (I used Meyer Lemon juice)
3 tbsp unsalted butter
1 tbsp fresh parsley, chopped
Season fish with salt and pepper. Dust with flour.
Heat oil in a heavy frying pan over MED heat. Shake off excess flour and brown the fish, about 2 minutes on each side.
Remove the fish from the pan and pour off any oil and burnt flour. Add garlic and capers to the pan and cook for a minute or so.
Pour wine and lemon juice into the pan, turn up the heat, and cook to reduce the liquid by half. Turn down the heat and stir in butter and parsley.
Return the fish to the pan to warm. Taste the sauce and add salt and pepper if necessary. Serve the fish with the sauce over top.
Yield: 4 servings
