This is an easy and delicious way to cook up a beef roast. The wine really adds wonderful flavor.
1 small beef roast, trimmed
1 small onion, chopped
2 large garlic cloves, minced
1 small can of Italian seasoned diced tomatoes
1 large can beef broth
1/4 cup red wine
salt and pepper
Heat a Dutch oven on medium high heat; drizzle with oil. When oil is hot, saute roast til nice and brown on all sides. Stir in onion and cook a few minutes. Stir in garlic and cook another minute or so.
Mix in tomatoes, broth and wine. Season to your taste. Pour into slow cooker. Cook on low 6 hours or high for 8 hours.
Served with buttered red potatoes.
