Grab and Go Breakfast - Microwave Mug Method
Breakfast is the most important meal of the day. Besides supplying nutrition, it starts our metabolism working early in the day, which is especially helpful to dieters. Too many of us skip breakfast, but this recipe may change that.
Here’s a super quick way to whip up a high protein breakfast with no mess. You can cook your breakfast and be out the door in under three minutes.
Ingredients:
2 Eggs
2 Tbsp. Milk
2 Oz. Shredded Cheddar Cheese
Salt and pepper to taste
Directions:
Spray inside of a large, microwave-safe coffee mug with nonstick spray.
Add eggs and milk, blending well with fork. Include optional add-ins* if desired.
Microwave on high for 50 seconds.
Stir mixture.
Microwave 30 seconds longer or until egg mixture is semi-firm.
Sprinkle cheese on top.
Add salt and pepper to taste.
*Optional add-ins include diced onions, peppers, cubed, cooked ham, and cooked, crumbled sausage. Be creative!
Eating in the car while driving is not recommended, but if you know you’ll be sitting in traffic for part of your commute, take along this tasty breakfast to make the wait more pleasant. This is also a meal kids can eat in the car on the way to school.
NOTE: Microwave ovens vary. The times shown are on the low side, so you may want to add seconds depending on results.

I recently found a nice way to use this similar type of recipe only I put it in muffin tins and cook it in the oven for about 20 minutes. I throw in peas, cheese, chives what ever I can find to toss in. lately it's just been chives, mrs dash and some turkey bacon. yumm. now I wish I didn't all ready eat breakfast.

My stove/oven hasn't worked in over 7 years, but it's okey, as I've got my microwave (I could NOT live without it), 2 skillets, a crockpot, and huge toaster oven, so really there's no need for a stove/oven....for me!
