What's for dinner? Mom's Minestrone soup recipe

- This is such a wonderful soup! We all loved it. It was served with homemade garlic bread.
- We stirred some fresh spinach at the end, but this is optional.
- olive oil
- 1/2 onion, diced
- 1 medium carrot, diced
- 1 celery stalk, diced
- 1 medium zucchini, diced
- 2 cloves garlic, minced
- 3 medium red potatoes, diced
- 3 cups thinly sliced cabbage
- 1 can cannellini beans, drained
- 1 small can diced tomatoes
- 4 small or 2 large cans chicken broth
- 1/2 t dried rosemary, rubbed
- salt and pepper to taste
- freshly grated Parmesan cheese
- Heat a little oil in a large soup pot over medium heat. Add onion; cook, stirring occasionally, 5 minutes or til softened.
- Add carrots and celery; cook, stirring occasionally, 3 minutes. Add remaining ingredients, except cheese.
- Cover and bring to a boil; reduce heat and simmer gently 1 to 2 hours.
- Serve with Parmesan cheese.

this would of been good here today as it was rainy and just plain nasty out... This would of been a comfort food..
