This recipe has long been a staple in my family. My sister used to make them too, and they are a quick and easy side dish for soup.
1 cup flour
1/8 t salt
3 eggs
1 cup milk
Spray a 12 cup muffin tin with cooking spray. Set aside.
Preheat oven to 450 degrees.
In a large bowl, combine flour and salt. In a separate bowl, combine eggs and milk. Whisk milk mixture into dry mixture til smooth.
Fill muffin cups 2/3 full.
Bake popovers 15 minutes. Reduce heat to 350 degrees and bake 15 minutes more.

One trick I learned years ago was to preheat the pan in the oven for 5- 10 minutes. The popovers rise a little more then.
I always ensure the oil or ducjfat or beef dripping is smoking hot before adding the Yorkshire Pudding batter. This ensuees that they really puff up.
