Easy peasy soup! We like to serve this soup with vinegar. Mom made popovers too.
1 pkg 15 bean mix
water to cover
2 cups diced smoked ham
salt and pepper to taste
Add beans, water, ham and salt and pepper to a large soup pot. Cover and cook about 2 1/2 hours, or til beans are tender, stirring occasionally.
Serve with saltines or vinegar.

Bean soup is one of those things that I like making... in the North. A good autumn or winter's day is perfect for some bean soup (vegetarian, of course) and fresh bread. Mmm... Boyfriend may dread the freezing winters, but I think that the yummy food may make up for freezing. :-)
